Amazing on espresso and pourover, this coffee shines in milk drinks, we use them in our white chocolate mochas. Roasted light, amazing for filter and coldbrew.
We proudly present this beautifully processed coffee from Aileu and Orijem Timor! Aileu is the first mill built by Project Origin in partnership with Orijem Timor. This mill is where many of their coffees are washed and processed, introducing modern processing methods that elevate this regions coffees. We are so honoured to offer coffee supported by our partners at project origin, who have not just increased their overall quality, but have also increased their farms pay by 20% this previous season.
Timor-Leste, an independent nation rich in diverse cultures, languages, and traditions, is shaped by its mountainous and fertile landscapes. Home to resilient communities, this country produces coffee with distinct flavours that reflect its unique terrain. Through close partnerships with local farmers, we are proud to share the essence of these highlands with you.
These Cherries are processed in a yeast-inoculated citrus-coferment oxygen free environment for an extended period at an ambient temperature to prolong fermentation which helps reduce rapid oxidation post-harvest. Cherries are then spread in thin layers on raised beds to dry and are regularly rotated even drying for 5-7 days. The temperature at Aileu wet mill is cooler for the first few days of drying. Cherries are then transported to Dili to our dedicated drying area where temperatures are warmer and moisture is lower which allows more control for the remainder of the drying process. Drying typically takes 25-30 days, this reduces moisture content to 10-12%. Sorted beans are stored in dried cherry pods in Grainpro bags in a closed warehouse until milling and export preparation.
